These dates are dried to a 3-5% moisture level.
With the moisture removed, 90% by weight is
left as carbohydrates, which is predominantly
sucrose. The remainder is composed of fiber,
protein and ash. Unlike refined sugar and sweeteners
where vitamins and minerals are stripped during
refining, the simple drying process maintains
the naturally occurring nutrients found in dates.
Sucrose, the naturally occurring sugar in dates,
is a disaccharide (double sugar), it is composed
of and breaks down into glucose and fructose.

natural alternative to refined sugars.

Agave Nectar
Agave Nectar
is a delicious golden syrup composed of 90-percent
fructose sugars and 10-percent glucose sugars
respectively. Because fructose is 42 percent
sweeter to the human brain than granulated sugar,
less is needed to achieve the same level of
sweetness. The less used, the fewer the calories
consumed. Natural fructose is also a great deal
easier to digest and use by your body than standard
refined sucrose products or even the so-called
"natural sugars" found in health food
stores. Unlike crystalline fructose sweeteners
which are chemically refined from corn, Agave
Nectar contains no sulfur dioxide, hydrochloric
acid or other harmful toxins.
It also has a low glycemic level and can be
most useful for people who are diabetic, have
insulin resistance (Type II, non-insulin dependant)
or are simply watching their carbohydrate intake.

The trace mineral manganese
is an essential cofactor in a number of enzymes important

the key oxidative enzyme superoxide dismutase, which disarms
free radicals produced within the mitochondria (the energy
production factories within our cells), requires manganese.
One ounce of maple syrup supplies 22.0% of the daily value
for this very important trace mineral.

Maple syrup is a good
sweetener to use if you are trying to
protect the health of your heart. The
zinc supplied by maple syrup, in addition
to acting as an antioxidant, has other
functions that can decrease the progression
of atherosclerosis. Zinc is needed for
the proper function of endothelial cells
and helps to prevent the endothelial damage
caused by oxidized LDL cholesterol and
other oxidized fats. (The endothelium
is the inner lining of blood vessels.)
Endothelial membranes low in zinc are
much more prone to injury. Additionally,
studies have found that in adults deficient
in manganese, another other trace mineral
amply supplied in maple syrup, the level
of HDL (the "good" cholesterol)
is decreased.

Zinc and manganese are
important allies in the immune system. Many types of immune
cells appear to depend upon zinc for optimal function. Particularly
in children, researchers have studied the effects of zinc
deficiency (and zinc supplementation) on their immune response
and their number of white blood cells, including specific
studies on T lymphocytes, macrophages, and B cells (all
types of white blood cells important for immune defenses).
In these studies, zinc deficiency has been shown to compromise
numbers of white blood cell and immune response, while zinc
supplementation has been shown to restore conditions to
normal. In addition to the role played by zinc, the manganese
in maple syrup is important since, as a component of the
antioxidant SOD, it helps lessen inflammation, thus supporting
healing. In addition, manganese may also act as an immuno-stimulant.
Organic Rice Syrup
This grain sweetener is
staple for sweetening commercially packaged products in
the natural foods industry. It offers the benefit of containing
about 50% soluble complex carbohydrates, 45% maltose, and
3% glucose. The glucose is absorbed into the bloodstream
immediately, the maltose takes up to one and a half hours
to be digested, and the complex carbohydrates take from
two to three hours, providing a steady supply of energy.
Slower absorption also allows the body to utilize complex
sugars for energy instead of having to store them as fat
for later use. Because rice syrup has retained its nutritional
"bulk," the sweetener is only about 40 percent
as sweet as white sugar. It provides a delicious mellow
sweetness to baked goods.
